I'm a windows user, and my iPad 2 is my first foray into the mac world. Can I download teams to the iPad directly, or via iTunes?

Sorry, but not in the current version. We'll provide a way to sync between PC's and devices in a future release. Until then, you can only modify the team and playbook of the one team built-in for your use.
