ipad: how do we learn the plays on the many teams included with the game

It's fun to play these teams against each other. Right now, I'm fascinated that playing Samurai, I can't beat Michigan state, and playing Michigan State, I can't beat Samurai.
I want to get these teams onto the practice field and the chalkboard and see how their plays work. (Many of their plays do not have descriptive names, such as "red play 2"). Is there a way to do this?
The latest version for the Mac or PC contains these same teams. You can use one of those versions to look at the plays.
